Coco Cocoa Chia Mousse

The perfect “after school” snack!

1 cup coconut milk (full fat will have most awesome texture)
1/4 cup chia seeds
1 tbsp cocoa powder
1 tbsp peanut butter
Dash of cinnamon
1/2 packet of stevia (feel free to use more)
Extra water if needed

Throw this in the Vitamix and blend at low speed. Then put it in a bowl and let it chill in the freezer for 10-15 minutes.

Chia has protein, omega 3s, fiber and calcium, and is surprisingly filling for such a little seed. Delicious treat at the end of a long day!
